in the USA, we got light from a torch by setting it on fire.

I guess thast you must be in the UK…

The system you are asking about is a windup generator and a storage capacitor. The generator is a rotor and a stator, the output is fed to a massive capacitor.

It’s probably using a magneto based generator to recharge a rechargeable battery, or a massive electrolytic capacitor.

The fundamental process is electromagnetism, where a wire passed through a magnetic field induces current. In such torches the mechanism is a dynamo, which the crank is linked to the dynamo shaft, which has the windings on it, which link the generated current to the load with brushes and a commutator, the magnet being stationary. For the squeez torch, the handle has a rack which turns a gear, which turns a magnet on over a fixed coil.
