First you’d have to find a timer that could take the surge current over a long time — very expensive, if they even make one. If you use one that cannot take the surge, it will eventually break (ruining your food) or catch fire.

Second, you could accidentally let the temperature rise too much and get food poisoning, if it turned off a minute before the cooling was to begin.

Additionally, if you turn it off mid-cycle, you might damage the compressor on the restart.

Any one of those will cost you far more than the few pennies of electricity you could save…

A new refrigerator will pay for itself in energy savings (vs. a 10 year old model) in only 4 years or so…

the thermostat would just keep it on until it reached operating temps again in the AM. You would be superior off to fill empty 2lts and gallon bottles with water and keep the inside full with them. They displace air and retain the cold so you do not lose as much cold air when you open the door.

better yet purchase a new energy star fridge AND keep the airspace filled with water.
